Tuna Sandwich

This recipe is part of RM15 Meal program.
A delicious yet easy meal for 4-6 pax with cost not more than RM 15.

(RM = Ringgit Malaysia)

INGREDIENTS: Cost in RM:
1 can Tuna in water (drained) 5
2.5-3 Tbsp Mayonnaise (recommended brand: Best   Food-Kraft) 3
1 medium onion, chopped 0.5
¼ tsp oregano 0.5
A pinch of salt (to taste) 0
A pinch of black pepper 0
A pinch of sugar 0
Hot water 0
1 pack bread 2.5
TOTAL: 11.5

Steps:

  1. Chopped the onion, dump it in hot water
  2. Combine all the : Mayonnaise, oregano, salt, black pepper, sugar
  3. Add the drained Tuna
  4. Drain the onion
  5. Add the onion to the Mayonnaise mixture
  6. Serve it with bread or plain crackers

 

Eggs Sandwich

INGREDIENTS: Cost in RM:
3 Boiled Eggs 1.5
2.5-3 Tbsp Mayonnaise (recommended brand: Best   Food-Kraft) 3
1 medium onion, chopped 0.5
¾ tbsp. Mustard (optional) 0.5
¼ tsp oregano 0.5
A pinch of salt (to taste) 0
A pinch of black pepper 0
A pinch of sugar 0
Hot water 0
1 pack bread 2.5
TOTAL: 8.5

Steps:

  1. Chopped the onion, dump it in hot water
  2. Combine all the : Mayonnaise, mustard, oregano, salt, black pepper, sugar
  3. Add the egg, mash the eggs with fork.
  4. Drain the onion
  5. Add the onion to the Mayonnaise mixture
  6. Serve it with bread or plain crackers

Japanese Curry Chicken

A delicious yet easy meal for 4-6 pax with cost not more than RM 15.

(RM = Ringgit Malaysia)

INGREDIENTS: Cost in RM:
½ Chicken, cut into small pieces (ask butcher to cut   for you!) 7
4 blocks Japanese Curry (recommended brand: Java   Curry) 7
1 ltr water (adjust) 0
2 Carrots, thick slice 0.5
2 Potatoes, cube cut 0.5
Salt, Sugar to taste  
TOTAL: 15

Steps:

  1. Boil the water
  2. Add the Japanese Curry Blocks, wait till dissolve
  3. Add the Carrots and Potatoes and Chicken
  4. Stir well
  5. Simmer in medium low heat until chicken is cooked through
  6. Adjust the taste, can add a bit of salt and sugar
  7. Serve with warm rice

Note: You can replace the chicken with: chicken pork

Fried Chicken with Easy Tomato-Garlic Sauce

INGREDIENTS: Cost in RM:
For the Fried Chicken:
Cooking oil to fry the chicken 2
½ Chicken, cut into small pieces (ask butcher to cut   for you!) 9
5 tbsp flour 0.3
3 tbsp maizena/tapioca 0.2
1.5 tsp Salt & ½ tsp white pepper 0.1
   
For the   Sauce:  
3 tbsp Cooking oil 0.2
1 Yellow Onion, thinly slice 0.2
2 Tomato (deseeded, slice) 0.3
5 cloves Garlic – grated 0.5
½ bottle Tomato Sauce 1.5
½ cup water (adjust) 0
2-3 tbsp sugar (to taste) 0.2
½ – 1 tsp salt (to taste) 0
1 tbsp maizena/tapioca flour + 3 tbsp cold water   (thickening agent) 0.1

Steps:

For the Fried Chicken:

  1. Heat the cooking oil in the wok until very hot (if not, the chicken will absorb the oil and will be soggy and oily)
  2. While waiting the oil, season the chicken, cover with the flour
  3. Once the oil is heated up, fry the chicken in medium high heat, manage the crowd in your wok, do not over crowd as it will lower the oil temperature, your chicken will be soggy and not crispy. You can consider frying he chicken in batches.
  4. Fry for more or less 5-7 minutes depend on your chicken size.

For the sauce:

  1. Heat up the pan, add 3 tbsp cooking oil
  2. Add the sliced yellow onion
  3. Add the garlic
  4. Cook for a while
  5. Add the sliced – deseeded Tomato, stir.
  6. Add the tomato sauce, water
  7. Add the sugar and salt (to taste)
  8. Once it is well seasoned, add the thickening agent (in a small bowl, mix together the flour and cold water, stir)
  9. Ready to serve as per your preference (you can combine the chicken and the sauce together or you can separate)

Note: You can replace the half chicken with: chicken fillet/pork/fish/calamari

Pasta with Creamy Sauce

This recipe is part of RM15 Meal program.
A delicious yet easy meal for 4-6 pax with cost not more than RM 15.

(RM = Ringgit Malaysia)

INGREDIENTS: Cost in RM:
2 tbsp Butter (good one, not   margarine!!) 1
1,5 tbsp Flour 0.1
300-400 gr Chicken Fillet, dice into cube 5
400-500ml Milk (adjust the thickness   of the sauce) 2
125 gr Cream Cheese (optional) 3.5
1 tsp Dry Oregano 0.2
1 tsp Coarse Black Pepper 0.2
½ tsp salt (to taste) 0
450-500 gr Pasta (Spaghetti or   fettuccine or any pasta, except Angel Hair)    + 1 tbsp salt 3

Steps:

For the Pasta:

  1. Boil enough water, add 1 tbsp of salt to it
  2. When the water starts to boil, put in the pasta, cook according to the time given in the package (al dente)
  3. Adjust the heat to avoid the water from over boiled, stir once in a while

 

For the Sauce:

  1. Heat up the non-stick pan
  2. Once the pan is hot, lower the heat to Medium Low, melt 1 tbsp of butter
  3. Add chicken, cook until tender, once the chicken is cooked, move it out to a plate.
  4. Continue with medium low heat, melt the other 1 tbsp butter
  5. Add 1 tbsp flour, whisk thoroughly for couples of seconds so the flour cooked, but don’t burn the flour!
  6. (if the heat too hot, adjust to low heat)
  7. Add the milk, keep whisking until no lump and sauce is thickened
  8. Add the cooked chicken
  9. Add the oregano, coarse black pepper, salt (to taste)
  10. Add the cream cheese until it is melted, if  the sauce is too thick, can add milk/water
  11. Put in the cooked and drained pasta to the sauce
  12. Ready to serve

 

Note:

  • If you have extra budget, you can add or replace the chicken with pork bacon.
  • You can replace the full milk into low fat milk for your diet
  • You can skip the cream cheese, but adjust with more salt

INGREDIENTS: Cost in RM:
Marinade sauce for Chicken:
½ Chicken, cut into small pieces (ask butcher to cut   for you!) 9
2 Cloves Garlic, Grated 0.2
2 tbsp Chinese Rice Wine 0.2
2 Tbsp Soya Sauce 0.2
2 Tbsp Sesame Oil 0.4
2 Tbsp Black Bean Sauce 0.4
1 Tbsp Fermented Soya (Tauco) 0.2
2 Tbsp Sugar (brown sugar is better) 0.2
 
Vegetable
3 tbsp cooking oil 0.5
2 Cloves Garlic, thinly slice 0.2
1 small thumb Ginger, slice 0.2
1-2 chilli padi, slice 0.1
1 Big Carrot, slice 0.5
A bunch of green bean/long bean 2
1 Red Paprika (or any color), Slice 1
Salt and Sugar and White pepper to taste 0
1 tbsp tapioca/maizena flour + 3 tbsp cold water 0.1

TOTAL:

Steps:

For the Marinated Chicken:

  1. Combine all ingredients together in 1 bowl, stir well
  2. Add the chicken, combine well
  3. Let it marinade, while we are preparing the vegetable (overnight in a fridge is better, but 10min will do it’s job)

For the Vegetable:

  1. Heat up the pan
  2. Add the oil, once it is hot enough, add the: Garlic, Ginger, Chilli Padi. Stir for a couple of second
  3. Add the carrot, cook for a while
  4. Add the Marinated Chicken, with all the sauce
  5. Add a bit of water
  6. Cook until chicken ¾ cooked
  7. Add white pepper
  8. Add the green bean and paprika
  9. Stir well, adjust the taste (sugar? Salt?)
  10. Add the thickening agent (can add water if too thick)
  11. Cook for a while (make sure the chicken is cooked through!!), ready to serve

Note: You can replace the chicken with chicken fillet/pork/beef
